Bhel Puri – Crisp Puris for Bhel and Chaat

These are the flat, crisp puris that give bhel and sev puri their crunch. They are made from refined wheat flour (maida) with groundnut oil, a little vanaspati, cumin and salt, rolled thin and fried until golden.

Crush a few over bhel made with puffed rice, sev, onion and chutneys. For sev puri or dahi puri, top whole puris with potato, curd and chutney. Their mild, savoury taste also makes them a simple nibble with tea.
