Sing Bhujiya – Spiced Coated Peanuts with a Tangy Kick

Peanuts are the heart of Sing Bhujiya, wrapped in a crisp coating of gram flour (besan) and black gram (urad dal) and fried in vegetable oil. The coating is seasoned with dry ginger, red chilli, ajwain, cumin, black pepper, amchur, cloves, cinnamon, black salt and a pinch of hing.

The spices bring heat and tang without overpowering the peanuts, so it suits most palates. Serve it with tea, put out a bowl at parties, or toss a handful into poha, bhel or a quick onion and tomato chaat.
