Jini Sev – Fine Besan Sev for Chaat and Poha

Also known as nylon sev or barik sev, Jini Sev is the thinnest kind of besan sev. Gram flour dough is pressed through the smallest holes of a sev press and fried in groundnut oil until light golden. It is seasoned only with salt and turmeric, so the besan flavour comes through clearly.

Its fine crunch makes it the go-to topping for sev puri, bhel puri, dahi puri and ragda pattice. Sprinkle it over poha or upma, toss it into chivda, or simply eat a handful with chai.
