Dry Samosa – Crisp Mini Samosas with Spiced Filling

Unlike the soft potato samosa, these small samosas have a flaky, crunchy pastry of refined wheat flour and a dry, spiced filling. The masala brings together red and Kashmiri chilli, coriander seeds, fennel, hing and a little sugar. Warm spices such as clove, cinnamon and cardamom round it out.

Serve a plate with masala chai when guests arrive, carry them on train journeys, or add them to a festive farsan platter. Green or tamarind chutney goes well alongside.
