Rajasthani Mixture – Peppery Chavanu with Sev and Peanuts

Also known as Rajasthani chavanu, this mixture is based on besan (gram flour). The gram flour dough is pressed into crisp sev, fried in groundnut oil and tossed with peanuts and chana dal.

Its seasoning leans on white pepper and cloves. Red chilli, Kashmiri chilli, black salt, ajwain and a pinch of hing give a sharp, savoury finish.

Serve it with evening tea, set a bowl out for guests, or carry a pack in your bag for a busy afternoon. It also works as a crunchy topping for poha or bhel.
