Split Bengal gram (chana dal) is fried in vegetable oil until crisp and golden, giving this namkeen a nutty taste and a firm crunch. Its plain, savoury flavour lets the dal itself take centre stage.

Keep a bowl out at tea-time, pack it in school tiffins or office drawers, or serve it with drinks when friends visit. It also adds crunch to bhel, chaat and mixed namkeen, or can be sprinkled over poha.
