Punjabi Mixture – Spicy Sev, Dal and Peanut Mix
This Punjabi-style mixture is made for those who like their namkeen with a kick. Crisp besan sev is mixed with chana dal, masoor dal and peanuts, all fried in groundnut and vegetable oil.
Red chilli, Kashmiri chilli, black salt, white pepper and cloves bring the heat. Amchur and ajwain add tang and aroma, and a touch of cinnamon, star anise, nutmeg and cardamom rounds out the spice.
Put out a bowl with evening chai, serve it with drinks when friends gather, or keep a pack at your desk. Thin sev, firm dal and whole peanuts give a different crunch in every handful.
