Tam Tam – Sweet and Spicy Gujarati Besan Namkeen
Sweet, hot and tangy all at once, Tam Tam is a much-loved Gujarati farsan made from gram flour (besan) fried in groundnut oil. Sugar balances the red chilli and black pepper, while sesame seeds, coriander seeds and cumin add crunch and aroma. A hint of cloves, cinnamon, star anise, cardamom and nutmeg gives it a warm finish.
Put out a bowl at tea-time, add it to a festive farsan platter, or carry a pack on long journeys. The sweet-spicy balance makes it a good match for masala chai or a cold glass of chaas.
