Salted Mamri – Simple Salted Besan and Chana Dal Crunch
Mild and savoury, Salted Mamri suits anyone who prefers a gentle salty crunch to chilli heat. It is made from Bengal gram (chana dal) and gram flour (besan) with a little semolina, fried in groundnut oil. Iodised salt, black salt and a pinch of hing give it a clean, simple taste.
Keep a bowl out with evening chai, pack some for travel, or serve it alongside pickles and curd. Because it is not spicy, it also works as a base for a quick chaat with chopped onion, tomato and a squeeze of lemon.
