Galefa – Flaky Gujarati Sweet Made with Ghee

Galefa, also called Devada or Sata, is a Gujarati-style sweet of maida dough made with plenty of ghee. The dough is fried until crisp and layered, then coated in sugar syrup and finished with almonds.

Its light, flaky crunch makes it a nice change from milk sweets. Serve it at festivals and family gatherings, or enjoy a piece with afternoon tea. It also adds variety to a mixed mithai box for Diwali and other celebrations.
