Ratlami Sev – Peppery Besan Sev with Cloves
Ratlami Sev takes its name from Ratlam in Madhya Pradesh, known for a spicier style of sev. Gram flour dough is pressed into thick strands and fried in groundnut oil, then seasoned with white pepper, cloves, red chilli, ajwain, black salt and a pinch of hing.
Enjoy a handful with masala chai, sprinkle it over poha, bhel or chaat, or keep a pack ready for guests. The cloves and pepper leave a warm, lingering heat.
